Simple Gobi (Cauliflower) Curry

Gobi means cauliflower in Hindi. Although this is a classical Indian recipe, we have given it a twist using bell pepper. This modification, not only adds taste to the dish but also some extra Vitam C. It is a simple and healthy recipe to eat cauliflower, while covering the unpleasant smell of brassinosteroids with all those wonderful spices that it contains. Don’t also forget, that adding spices to your dishes, increases variety in your diet, helps you consume more healthy nutrients, as well as maintain a balanced diet.

Recipe

 

Ingredients for 4 people

 
1 big onion

3 garlic cloves
1 inch ginger
3 tomatoes
1 red, orange or yellow bell pepper
1 big cauliflower
5 – 6 potatoes
20g parsley or coriander leaves
½ cup of green peas or green beans (optional)
½ tsp. turmeric powder
1 cinnamon stick
1 bay leaf
3-4 cloves
4 tbsp. olive oil
½ tsp. chili powder or garam masala (optional)
Salt and pepper to taste

Instructions 

 
  1. Wash and cut the cauliflower in 2 inch pieces.
  2. Peel the potatoes and cut them in a similar size as the cauliflower.
  3. In a food processor, make 2 different pastes separately: 1) with the onion, the garlic and the ginger, 2) with the tomatoes and the bell pepper.
  4. Heat 2 tbsp. olive oil in a pan, add the cinnamon stick, the bay leaf and the cloves and saute for 30sec.
  5. Add the fine paste No1 saute for 1min and carefully add the paste No2 as some hot oil may get out of the pan.
  6. Add the chili powder and the turmeric powder and keep stirring until all the water evaporates.
  7. Add the cauliflower and the potatoes, as well as the peas or the beans (optional), together with some salt and pepper and mix well.
  8. Close the lid and let the food simmer in low fire for about 10min, while stirring a couple of times.
  9. Add 1 cup of water, mix well and let it simmer for 5min.
  10. Add the garam masala, mix well and let it simmer for another 5min.
  11. When the food is ready, switch off the fire and add 2 more tbsp. of olive oil.
  12. Mix well and wait at least 10min before serving so as all the spices to blend well.

Tips

 
  • If you want the sauce to be thicker, smash one or two potatoes with a fork and mix well.
  • You can accompany this delicious curry with rice, couscous or some warm whole wheat rotis.
  • No tomatoes, no problem! If for some reason, you are avoiding tomatoes you can also make this recipe tomato free. The taste will be a bit stronger but equally good.
