Vegan Mung Bean Burgers

These burgers are not only tasty, but also packed with many nutrients and other amazing health benefits. They are a great alternative to meat burgers and following this recipe you can easily make a lot, freeze them and every time you need to eat something quick have a great choice available.

Recipe

 

Ingredients for 4 people

 

2 cups of dried mung beans
1 cup of quinoa
2 onions
3 garlic cloves
Juice of 2 lemons
1 inch ginger
½ cup olive oil
70g parsley
10 fresh leaves of mint
1 tsp. coriander powder
1 tsp. turmeric powder
½ cup of semolina or 1 cup of rice flower (for a gluten free option)
1 green or red chili (optional)
Salt and pepper to taste

 

Instructions

  
  1. Soak the mung beans overnight in cold water.
  2. Boil the beans with a bit of salt and strain them.
  3. Boil the quinoa in 2 cups of water and let it cool down.
  4. Make a fine paste of the onions, the garlic, the parsley, the mint leaves, the ginger, the lemon and the chilli.
  5. In a big bowl mix the mung beans, the quinoa, the paste, the semolina or the rice flour, the coriander powder, the turmeric powder, the olive oil and add salt and pepper to taste.
  6. Mix everything well, cover the bowl and let it aside for about 20min.
  7. Take 2 tbsp. of the mixture and give them a shape of a burger.
  8. You can cook them in a preheated skillet in medium fire (no need of any oil) or in the oven (in the grill with air), on a baking paper for 25min at 200oC.

Tips

 
  • You can enjoy these burgers either in a burger bun or as a tortilla or roti wrap, together with some salad or yoghurt, according to your preference.
  • They match well with tomato, lettuce, rocket and yoghurt or basil pesto.
