This thick and nutritious vegetable stew is ideal for the cold winter days. The mix of vegetables and spices not only will satisfy your taste glands, but will also boost your health!

Recipe

 
Ingredients for 3 people
 

250g mushrooms
½ cup green peas
2 carrots
1 small kohlrabi or 1 small fennel
150g celery
2 onions
3 cloves garlic
1 tomato
2 potatoes
1 tsp. tomato paste (optional)
1 cup of vegetable broth (optional)
1 tsp. rosemary
2 cloves
½ cup of red wine or black beer
¼ tsp. cinnamon powder
3 bay leaves
Salt and pepper
1 tbsp. corn starch (optional)

Instructions

 
  1. Chop all the vegetables in small pieces and preheat a non-sticky pan.
  2. Saute the onion and the garlic until they get golden.
  3. Add the tomato, the bay leaves, the rosemary, the cinnamon and a bit of salt and saute until all the water of the tomato evaporates.
  4. Add the mushrooms and a bit of salt and continue stirring until they get a bit dry.
  5. Add the wine or the beer and wait until all the alcohol evaporates.
  6. Add the rest of the vegetables (except the peas), together with the broth and the paste, salt and pepper and let them boil for 15min.
  7. Add the green peas and let the food simmer for another 20min.
  8. For a thicker stew, you can either add 1 tbsp. of corn starch in 2 tbsp. of cold water and let it simmer a bit more to the desired consistency, or smash 3-4 potatoes and mix them well with the rest of the vegetables.

 

Tips

 
  • You can enjoy this delicious stew with couscous, brown rice or simply some bread.
  • For a dose of extra nutrients you can add a handful of ground spinach or purslane together with the peas.
