We have all heard about the health benefits of the Mediterranean diet. Since I was a child, I remember that there was always a bowl of this salad in our fridge. We were mostly using it as a side dish, to give some extra taste and add some variety to our main meals, but I was also often enjoying it with some bread, as an afternoon snack or as a quick dinner. I remember my father often saying: “Beetroot cleans your blood”. This was a simplistic way to actually motivate a child to keep eating beetroot and help me understand all the amazing health benefits of beetroot

This salad is not only appealing to the eye, but also excellent for the health. Containing beetroot, garlic and yoghurt is the perfect natural medicine for a strong heart, for maintaining a healthy brain and gut microbiome and for protecting yourself from infections. It has great anti-inflammatory and antimicrobial effect, keeps your blood pressure low and helps to maintain healthy blood veins. According to some scientific studies, It also seems to be a great food to improve your physical performance if suffering from breathing problems (like COPD).

Recipe

 

Ingredients 

 

1 big boiled beetroot
500g plain yoghurt
2-3 garlic cloves
1 tbsp. olive oil
1 tbsp. red grape vinegar
½ tsp salt

Instructions

 
  1. Make the garlic into paste (I usually chop it in very small pieces add the salt and smash it in a mortar).
  2. Chop the beetroot in small cubes.
  3. Mix everything (yoghurt, garlic paste, beetroot cubes, olive oil and vinegar) in a bowl, mix well and put it in the fridge.

Tips

 
  • It usually takes some time and mixing before your salad gets this nice pink color. This is why I prefer to make it at least 4-5h before serving it.
  • You can keep it at least for 1 week in the fridge and use it as a side dish for your daily meals.
  • Enjoy it on bread or tortillas or as a dip for your vegetables.
